Buckwheat Pancakes

Buckwheat makes a delicious, healthy crepe which are gluten free and dairy free and perfect for a healthy breakfast or light meal. Traditionally buckwheat pancakes are called galettes in France.

For best results, make the batter in advance and store them in the fridge for at least 2 hours but they can be made up at the last minute too. Try this super simple tasty recipe.

Serves 2

Ingredients

  • 1 cup 100% buckwheat flour
  • 1 egg
  • 1 1/2 cups of water
  • A pinch of salt

Sieve the flour into a bowl to remove any lumps

Add the egg, water and salt and mix together until the mixture is smooth.

If possible, store in the fridge for 2 hours or overnight

Melt a little butter on your pan and swirl around so that the base of the pan is covered in butter

Add a small around of batter and swirl over the pan to give you a nice, thin crepe

Enjoy with a squeeze of lemon and a dusting of desiccated coconut mixed with cinnamon for sweetness or any filling of your choice!
